Simple and Delicious Homemade Churros

Our March birthday boy requested churros for an extended family birthday party. Every recipe I found was not going to be enough! So here’s a big batch recipe for homemade churros + some helpful tips and tools at the end. Enjoy!

How many this makes:

  • About 40–60 churros (depending on size)
  • Serves roughly 15–20 people

Ingredients

Churros:
  • 4 cups water
  • 1 cup unsalted butter, diced
  • ½ cup white granulated sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 4 cups all-purpose flour
  • 4 large eggs (cold)
  • 4 teaspoons vanilla extract
  • Vegetable oil (for frying)
Cinnamon Sugar:
  • 2 cups white granulated sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. In a large pot, combine water, butter, sugar, cinnamon, nutmeg, and salt.
  2. Bring to a boil over medium heat.
  3. Once boiling, add all the flour at once and stir quickly with a wooden spoon.
  4. Keep stirring until a thick dough forms and pulls away from the sides (about 1–2 minutes).
  5. Remove from heat and let cool for 5–10 minutes.
  6. Add eggs one at a time, mixing well after each (it will look separated at first—keep going).
  7. Stir in vanilla extract.
  8. Dough should be thick, smooth, and pipeable.
  9. Transfer dough to a piping bag fitted with a large star tip.
  10. Heat oil in a deep pot to 350°F.
  11. Pipe 4–6 inch strips of dough directly into hot oil (use scissors to cut).
  12. Fry in small batches (4–6 at a time) to avoid overcrowding.
  13. Cook 2–3 minutes per side until golden brown.
  14. Remove with a slotted spoon and place on paper towels.
  15. Mix sugar and cinnamon in a shallow bowl.
  16. Roll warm churros in the mixture until fully coated.

Helpful Tips

  • Don’t fry all at once:
    Break into 3–4 frying rounds so you’re not overwhelmed.
  • Keep them warm:
    Place finished churros on a baking sheet in the oven at 200°F while you finish frying.
  • Prep ahead option:
    You can make the dough ahead and keep it covered at room temp for a couple hours.
  • Kid-friendly hack:
    Pipe churros onto parchment squares first, then drop them into oil—less stress, especially if little ones are around.
