Easy & Delicious Breakfast Meal Prep

I love when I go to recipes and I just get the recipe. I don’t like a big long blog posts. So I will keep this short, but I do want to say something before I share this recipe. This recipe is one that I used to make years ago and then I kind of forgot about it! You know how that happens. I’m trying to lose some weight that I’ve gained since I quit breastfeeding my youngest. This recipe is great because it’s delicious, easy, and meal prep-able. I make one big batch and it lasts me all week because no one else in my family likes it. But I promise, this one is a keeper!

Sweet Potato and Turkey Sausage Skillet

This is a quick and easy breakfast recipe, perfect for meeting healthy weight loss goals while still being delicious!

Ingredients
  

  • 2 8-oz bags frozen diced sweet potatoes
  • 1 lb ground turkey
  • 1 apple diced (Pink Lady or Gala work well)
  • ¼ cup onion diced
  • 1 teaspoon turmeric
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • 1 –2 teaspoons olive oil divided, as needed
  • 2 cups fresh spinach chopped
  • 2 eggs per portion
  • Salsa for topping

Method
 

  1. Preheat the oven to 350°F.Spread the frozen diced sweet potatoes on a baking sheet and drizzle lightly with olive oil. Roast for about 20 minutes, or until tender.
  2. While the sweet potatoes cook, heat a large skillet over medium heat. Add the ground turkey and cook until browned.
  3. Stir in the diced apple and diced onion. Sauté until the onion is tender and the apple softens slightly.
  4. Add turmeric, minced garlic, salt, and pepper. Continue cooking until the turkey is fully cooked and fragrant. If the pan seems dry, add about 1 teaspoon olive oil.
  5. Remove the sweet potatoes from the oven and add them to the skillet. Stir to combine.
  6. Turn off the heat and mix in the chopped spinach. The residual heat will wilt it.

Notes

This recipe is enough to last for a whole week. Store in the fridge and reheat in the microwave.
I like to eat this with two eggs (over easy is my favorite but whatever your preference is fine!) and salsa.
