In my house, we love a good sweet treat. What I love even more, is a good sweet treat that doesn’t take too much time to make or clean up. Enter microwave caramel! This simple recipe is a holiday staple for my family and because you just dump each ingredient into a bowl, it’s so easy for the kids to help out too. I would recommend an adult or bigger kid taking the bowl out of the microwave between ingredients and after the big cook, as it will get hot!

INGREDIENTS:
- 2 cubes of butter
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup corn syrup
- 1 can (14 oz.) of sweetened condensed milk
You will need a bowl that is at least 8 cups capacity to avoid spilling over. I would recommend glass because it will get really hot, but any microwavable bowl will do. Add the ingredients listed above in the order that they are listed in, mixing well between each round in the microwave. Microwave time for each ingredient will vary, but each round should be 2 minutes or less at a time.


After you’ve added all of your ingredients and they are more or less incorporated, put the caramel mixture into the microwave for 12 minutes. When it is done, it will be HOT! After the time in the microwave is complete, blend with a hand or stand mixer for two minutes. Spray a cookie sheet, pour the caramel out, and let sit for an hour. Then enjoy!


* Pro Tip: If using a stand mixer to blend your caramel, give the bowl and mixer attachment a quick spray to avoid it sticking when you’re ready to dump it into the cookie sheet.
