Leftover Fruit Bread

Do you find it painful to throw food away? Especially with current food prices! Here’s a great recipe if you have fruit that’s past its prime.

Ingredients:

2 cups blended fruit

3 eggs

3/4 cup sugar

1/2 cup sour cream

1/4 cup olive oil

1 Tbs. Molasses

1 tsp. Vanilla Extract

3 cups all purpose flour

2 tsp. cinnamon

1 tsp. nutmeg

1/2 tsp. salt

1 tsp. baking powder

1 tsp baking soda

1 cup chocolate chips (optional)

Directions:

Pre heat oven to 350 degrees

Blend your fruit. I used half a banana, peaches and a couple nectarines. If you have extra puree, freeze whatever you have left in freezer bags in 2 Cup measurements for next time!

In mixer, add the fruit, eggs, sugar, sour cream, oil and molasses. Mix well. Add the remaining ingredients.

I did half a batch with chocolate chips, and half without and topped those with butter. Loved them both ways! And so did all the kids.

Grease pan. Makes 24 muffins or use a 9×12 cake pan.

Bake. I baked the muffins for 25 minutes. Time may vary. I think a cake pan would take about 35. You can insert a tooth pick to the middle, if it comes out clean, it is done!
