I was given some canned squash and needed to use it somehow. Here’s what I came up with! The kids ate right up! Also, I use an unflavored protein powder for all my baking, smoothies, milkshakes, etc. If you are looking for and unflavored protein powder, I’d recommend this one!

Ingredients:
1 6oz pumpkin puree
1 6oz squash puree
3 eggs
1/2 cup plain greek yogurt
3/4 cup agave
3/4 cup granulated sugar
1/4 cup coconut oil (melted, butter works too)
1 tbs. molasses
1 tsp. vanilla extract
3 cups white flour
2/3 cup unflavored protein powder
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking powder
1 tsp. baking soda
1 cup chocolate chips
- Pre-heat oven to 375 degrees
- In stand mixer or large bowl add pumpkin, squash, eggs, sugar, agave, yogurt, oil, molasses and vanilla. Mix well.
- Add all remaining ingredients except chocolate chips. Mix well and then add chocolate chips until combined.
- Grease 10 x 15 pan (common names- cookie sheet or jelly roll pan). Pour batter in.
- Bake for 25 minutes. Let cool. Enjoy!
