Chocolate Chip Pumkin Bread

I was given some canned squash and needed to use it somehow. Here’s what I came up with! The kids ate right up! Also, I use an unflavored protein powder for all my baking, smoothies, milkshakes, etc. If you are looking for and unflavored protein powder, I’d recommend this one!

Ingredients:

1 6oz pumpkin puree

1 6oz squash puree

3 eggs

1/2 cup plain greek yogurt

3/4 cup agave

3/4 cup granulated sugar

1/4 cup coconut oil (melted, butter works too)

1 tbs. molasses

1 tsp. vanilla extract

3 cups white flour

2/3 cup unflavored protein powder

2 tsp. cinnamon

1 tsp. nutmeg

1 tsp. baking powder

1 tsp. baking soda

1 cup chocolate chips

  1. Pre-heat oven to 375 degrees
  2. In stand mixer or large bowl add pumpkin, squash, eggs, sugar, agave, yogurt, oil, molasses and vanilla. Mix well.
  3. Add all remaining ingredients except chocolate chips. Mix well and then add chocolate chips until combined.
  4. Grease 10 x 15 pan (common names- cookie sheet or jelly roll pan). Pour batter in.
  5. Bake for 25 minutes. Let cool. Enjoy!
